At 7:30 in the morning, the palapa in Muyil smells of coffee and fresh tortillas. Visitors who left their hotels in Tulum before dawn arrive a little sleepy and are welcomed with a plate of fruit and a cup of something warm. It is the first moment of a full day in Sian Ka’an, and it is not a formality.
For our cooperative, breakfast is where hospitality begins.

What We Serve
On the Early departure of the Ancient Canal Tour, the kayak tour and the Muyil Sacred Mayan Immersion, breakfast is included. The menu changes with the season and what is available locally, but a typical morning includes:
- Fresh tropical fruit: papaya, pineapple, watermelon.
- Scrambled eggs, beans and regional dishes prepared by our cooks.
- Bread or tortillas.
- Fresh orange juice, regional coffee and tea.
- Purified water to refill your reusable bottle.
Nothing elaborate, nothing imported for show. Just good, local food made by people from the community.

Who Cooks It
The kitchen of the palapa is run by the cooperative’s own kitchen team, led by women and men from the community. When you eat here, your money stays in the community instead of going to an outside supplier.
This matters more than it may seem. In many tours, meals are bought from outside suppliers or served in large restaurants that have nothing to do with the place you are visiting. At our palapa, the meal is part of the place.
More Than a Meal
Breakfast also has a practical role. It is the moment your guide introduces the day: the history of the region, the route, the safety rules on the water and what animals you might see. It is when you pay the federal CONANP access fee (approximately $225 MXN per person, subject to change), use the restrooms and get ready.
And it is when visitors start talking to each other. By the time the group walks to the dock, strangers have become companions for the day.

Lunch Closes the Circle
After the morning on the lagoons, you return to the same palapa for a traditional Maya meal. On the Midday departure of the Ancient Canal Tour, the meal is served on arrival instead of breakfast. Either way, the day begins and ends at the same table, which is how hospitality works in a Maya community.
